Labor Day weekend is here! Kick back and relax at home with this delicious breakfast treat!
21/2 cups flour
1/4 cup sugar
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
2 cups buttermilk (or more)
2 cups sour cream, regular or light
2 large eggs
1 tablespoon vanilla
butter, for griddle
blueberries, fresh or frozen, thawed
Whisk together dry ingredients. In a separate bowl, whisk together buttermilk, sour cream, eggs and vanilla. Fold together dry and wet ingredients, mixing until just blended (do not over mix). Whisk in a little extra buttermilk if batter is too thick.
Cook pancakes on a hot, buttered griddle until both sides are golden brown. Serve immediately with bluberries and maple cream.
MAPLE CREAM
1 1/2 cups whipping cream
1/2 cup pure maple syrup
Whip together in a bowl until soft peaks form. Serve with pancakes, waffles or French toast
*This maple cream is also delicious on desserts like bread pudding, pumpkin pie or gingerbread cake.
